During the Song and Yuan dynasties, Tuling became an important stop on the road linking Fuzhou and Xiamen. Many inns were built to offer food and lodging to travelers. Local pigs were free-range, which made the meat on their legs firm and tasty. Local cooks took advantage of this and created delicious braised pork trotter dishes. With the praise of travelers, Tuling pork trotters gradually became well known across the region.
