Rapeseed Flowers

From February to March every year in places like Xiamen, Fuzhou, Longyan, and Nanping in Fujian, rapeseed flowers bloom everywhere. The bright yellow flowers on the fresh green stems form golden fields that shine under the sun, beautifully matching the green mountains and clear waters.

Rapeseed flowers are also a common edible flower in spring. They are rich in vitamin C, dietary fiber, calcium, and other nutrients. In Fujian, people often stir-fry them or cook them in soup. The taste is tender and fresh, with a special flavor.
