Razor shell, or razor clam, is a cherished shellfish in Fujian. It is prized for its generous size, thin shells, and plump, succulent meat. The broth it yields is clear, delicately sweet, and wonderfully mellow. These clams have been cultivated along Fujian's coast for over 400 years, with key production areas including Xiapu, Lianjiang, Changle, and Fuqing.
